    It's that time of year: LTH is participating in Soup & Bread 2013 at the Hideout (1354 West Wabansia Chicago IL 60642)

    They're shaking things up a bit this year--each night has a theme--our theme night is-- Triple B: Beans, Beer, and Bacon!

    We need 7 Soup Chefs and unlimited bread and dessert volunteers. And, of course, people to come out and support our efforts!

    If you're interested, please sign up now and you can let us know what soup you'll be bringing later. Just keep in mind that we'll need 2 vegetarian options, preferably one of them vegan. The rest just need to follow the theme.

    Participants:

    Soup:

    1) irisarbor--Vegan pea soup with barley, shitake, maitake and Herbes de Provence and Lost Coast Eight Ball (Oatmeal) Stout
    2) stevez (Vegetarian minestrone soup with beans, beer (probably something really light) and optional bacon)
    3) boudreaulicious (Ginger Soybean soup with beer-braised Pork Belly (as a topping--o/w vegan)
    4) Wendy (White bean and roasted tomato)
    5) laikom (Carne en su Jugo)
    6) leek ("Five B Borscht": Beer, Bacon, Beans, Beets, Beef)
    7) Mrs. Ingie (Birnen, Bohnen und Speck, which translates to Pears, Beans and Bacon)

    Bread:
    1) ronnie_suburban
    2) Cathy2
    3) Izzy (cornbread with corn kernels, cornbread with grilled onions and cheese)

    Other:
    1) justjoan (walnut brownies and brown butter/sea salt cookies)
    2) zoid (whatever we need help with!)
    3) hellodali (white chocolate cherry blondies and chocolate chip coconut pecan blondies)

    I'm in and I'll do either vegetarian or vegan.

    I'm thinking of a soup that will combine all 3- beans beer and Bacon !

    I'm leaning towards something with all three as well--I made "my" version of Spanish Bean soup the first year I participated which has garbanzo beans and bacon (salt pork really but close enough)--I may have to revisit...some dark beer in there could be really delicious...

    And Laikom, CESJ would be delicious!!!!!

    I'm rethinking this. It seems too obvious. I'm switching to a vegetarian Wisconsin Cheese and Beer soup with crumbled bacon as a condiment for the meatarians.

    BTW, who are the "celebrity" chefs that will be serving with us?

    Usually but not always. Depends on the beer.

    There is a long list of beer companies that don't use animal ingredients, additives, or processing on peta.org, including many of the Goose Island beers and even Budweiser.

    I would have never guessed in a million years that beer could be anything other than vegan (do yeast count as annimals)?

    I would like to participate. I am willing to do vegetarian/vegan if meat is all taken - I do a really good borscht.

    Not sure about yeast but I remember an oyster stout that was recently on tap at The Fountainhead that was made with oysters. There was a warning on the menu to vegetarians about this.

    Great idea--sounds delicious!

    As for the "chefs"--I subtly tried to convince the organizer that we had plenty of chefs in our membership, yet she politely offered us the same 6 spots that all of the other volunteer organizations are getting this year. I'm guessing the chefs are expected to help with the marketing of the event and there is no begrudging them the opportunity to help get a great turnout. Who will be paired with us is still TBA. I hope they know they'll need to bring it :D !!!

    Welcome leek--since stevez is doing a veg+ option, you are welcome to do whatever you like! My only suggestion would be that if you decide to do borscht, you do a "hot" version since a cold soup might not be fully appreciated at the end of January. Although if this weather keeps up, maybe it will!!

    Since we're now full for soup entries, I will start a waiting list (not impossible that we could need one or two). And we still need bread/baked good entries. Hope to see a good LTH turnout from the eater side as well!!

    Oh yes, hot borscht, absolutely! The Russian cabbage potato and beet version from Moosewood is the one I usually do, not quite sure about the bacon, beer and beans with that one, but I think for sure you should drink beer with it.

    However, if I'm not limited, I'll be looking into the theme a lot more closely between now and then... And I have a crockpot if it's needed.

    Some beers use animal bi-product based finings (clarifying agent). The finings could be made from fish swim bladder (don't ask me) or gelatin, among other things. Since the finings are used cause visible solids to drop out of suspension, the fining agent drops out as well, so there technically isn't much, if any, left behind in the beer you drink. I think most beers today are filtered for clarity and therefore the traditional finings won't be used. I believe you are more likely to find them in traditional English styles.

    i'm pretty sure they want us to stick to the theme--maybe you could adapt it to include some cranberry beans or something :)

    I’ve never done one of these before - what does signing up for "bread" entail? Do I have to bake or can I pick up some good bakery bread? What would I be expected to do the night of?

    i can't find any info on the Soup&Bread website about 'baked goods' or on the earlier LTH links. i'd love to contribute something. i can do biscuits, or if they want desserts- i can do some cookies. anybody have a clue about what would be appropriate??? thanks, joan

    I don't think they really ask for anything but, believe me, anything contributed will be eaten! The way it works is you come, pay what you wish (I don't recall if they have a "suggested" amount) and grab a bowl. You can sample as much soup as you like and there are a couple of tables with breads, savory and sweet, as well as a few baked goods. The focus is the soup. But people love having a bit of dessert so when it's there, I think it's appreciated. Hope that helps. Cathy2 might be able to elaborate a bit more.
