    Hi,

    Yesterday, I was at J Fresh Market (2411 S Wallace, Chicago). They had a large tank of lobsters selling at $7.99 per pound.

    They also were selling recently died lobsters for $3. I don't know if it was $3 per pound or simply $3.

    I was not going home directly or I might have bought lobsters.

    You do not want to purchase a dead Maine lobster.
    The innards decay very quickly.
    In my opinion there is a reason for dietary Laws that prohibit the eating of fish without scales. They decay quite quickly once dead and will make you ill. Today we have refrigeration but one still must be careful. The ‘smell test’ is probably your best defense.
    Shell fish must be sold with a Harvest and Ship Date.
    Example, Saturday I purchased 9 soft shells, previously the same source, all nine were excellent and some were alive and moving. These had no movement but i purchased anyway. Upon cleaning the ‘Smell test’ identified 2 that maybe had a faint off wisp. They were discarded. We ate the other seven, excellent and no one was ill.

    I've gotten the $7.99 lobsters at Park to Shop, both the Wallace Street and newly converted Archer Ave locations, a couple of times in recent weeks. These have been way better than usual cheapie Chinatown lobsters - very lively, hard shell and packed with meat. I probably got more than two cups of meat from two 1.25 pounders yesterday. Very tasty.

    Lobster $8.99/# at H-Mart, Niles.
    My first foray to the Northside from Wisconsin since the Covid began.
    Got to Fresh Farms Touhy at 7:30 for a whole veal loin I have cut into 5 chops for grilling.
    Lamb chops, outside skirt, ground lamb and veal plus calves liver completed the meat.
    Greek Feta from Sheep’s milk, olives, Home style Ricotta, French Sourdough , Polish style Horseradish and assorted vegetables were also purchased.
    Not many in the store.
    Got to H-Mart at 8:15 but they were having a problem opening.
    Finally got into the store and procured some vegetables for Korean dishes, lobsters for my daughter’s family, 3 for us to do a clambake this evening with Cherrystones and Wisconsin corn.
    3 Lobsters will be poached off and shucked, frozen for either lobster rolls or Lobster Maki rolls. The lobsters are hard shell and not the softer shell one usually finds in the summer.
    The Coral and lobster tomalley will be saved for a fish stew of some kind.
    I also purchase the large Quahogs, slightly poach until they just open, shuck and freeze for clam chowder. The chopped clams that you see for sale have had a preservative added and always taste funny to me.
    Not many in H-Mart.
    The fish counter at Fresh Farms doesn’t open until 9 and it usually takes H-Mart until 10 to get all the fresh fish on display.
    But today I was after Lobsters and didn’t want to wait or be in crowded stores.

    I realize there is not a tremendous amount of love for the frozen 4oz sale lobster tail, rightfully so. I am here to tell you that the linked recipe takes these name-tag & cap crustaceans to new heights, greater than the sum of the parts does not cover. Happy Holidays all.

    At 88 Market just west of Chinatown, Maine lobsters were $15.99 per pound.

    They also had live Pacific lobsters for $38.99 per pound.

    Cath---I was about to say those are usurious prices, until I went to my guy in York, Maine online. If I get 'halves' (1.5 #) there like I will in-person next month, they'd be about ten bucks a pound, an extra dollar a pound to steam 'em for me. Add shipping to 4 lobsters being shipped here, however, and suddenly that price is $177!!

    The cost of shipping live lobsters is what's usurious!!!

    Hi,

    H-Mart has lobster this week for $9.99 per pound, BUT there is a limit of 3 and a minimum purchase of $100. If the lobsters weigh in 4.5 pounds, you have $55 more to buy.

    H-Mart has been selling lobster for roughly $18. per pound, so this is an improvement.

    Hi,

    Yesterday at H-Mart, live lobster was $22.99 per pound. It sure beats the 10% inflation estimates by a lot.

    Last summer at 88 Market, I bought lobsters for just under $9 per pound (I think it was $8).

    H-Mart, yesterday live Canadian or East Coast, $11.99#.
    As good as any hard shell lobster I have ever had anytime and anywhere.
    Three or four desultory looking Dungeness Crabs occupied one tank.
    No King Crab as the last batch arrived dead.
    The Frozen cooked Snow Crab clusters intrigued me.
    I have watched many YouTube videos of Japanese sushi chef’s preparing these crabs for service. They invariably start with live or frozen uncooked which I cannot procure in the Mid West.
    These were $179.99 for a 10# box or #19.99/#.
    I purchased three clusters to try out the techniques.
    Picking the body sections was no problem as we have picks, stout shears and a lot of experience.
    The big claw again was not a problem, just cut around where the pincers join and wiggle and pull and the meat comes out in one piece, a ‘Cocktail Claw’.
    The legs were another story.
    Using a rolling pin just did not work without a lot of effort on a large segment.
    Using a-sharp knife to cut a sliver along the leg was judged too fraught with danger after my first leg.
    I used the shears to cut along the leg and then forcibly extract the meat into a somewhat contiguous segment, not pretty.
    The body meat will be combined with a little cucumber, rested on a Shiso leaf with leg segments and one claw on top. A dollop of Ikura will top the presentation along with grated Yuzu my Granddaughter and I picked up at Mitsuwa yesterday as we made a Grand Tour.
    I sure would like to find a source for this type of crab alive.
    I have seen chef’s extract using a live crab, the meat raw from the big leg segment leaving it attached to the rest of the leg, This is then served with a dashi and the meat briefly swirled through the hot dashi and eaten.
    One can if one wants serve the crab on a bed of Sushi rice which is a typical Japanese presentation.

    Yesterday (NYE), I spotted a few stout lobster tails in the seafood case at Jewel on Harlem & Lawrence for $89.99/lb, seems high!

    Luckily, I was there for some smoked fish which was very good. A chunk of whitefish and a whole herring from Suzie Q made for some tasty midday grazing.
