    Hi- I used to make homemade bread occasionally, and I would get the yeast in bulk at Oak Street Market. Whole Foods carried it for a short while, when they moved into their current location in downtown Evanston, but then they quit carrying it. Since then, I have never seen it anywhere. I know I can buy the packets of yeast everywhere, but they are much more expensive than what you get in bulk. Does anyone know where I can get dry yeast in bulk in the Chicago area? Thanks, Nancy

    I've also noticed that many Whole Foods stopped carrying larger packages of yeast. I tried to get an explanation once and it wasn't satisfactory.

    Hi- Thanks for the links. I did a search on here, but somehow I missed those threads. Searching the web, I also just found out that they carry the bags of yeast at Sam's Club, and so I will look for it the next time I am in there.

    The individual packets are rip off city, and I hate to spend $1 on enough yeast to make two loaves of bread. I think the reason why WF quit carrying the yeast in bulk is because when they had it they were keeping it in the refrigerated section, and they don't want to take the space. Thanks, Nancy

    When you say "in bulk", I hope you don't mean those open bins where you serve yourself. I think for yeast, you want an airtight package that has a clearly marked packaging and/or expiration date. I buy the "bricks" of yeast -- ones that look like this:

    that one pound bag of yeast would make 302 loaves of bread in my house (2.5 lb. loaves that is)
    645 gr flour
    518 gr water
    12 grams salt
    1.5 grams yeast.

    Hi- They used to sell it all ready bagged up in a plastic bag, or maybe it was in a plastic container, similar to the grated Parmesan cheese they sell at Whole Foods. . It has been a while since I bought it that way. I would get about a half pound at a time. They refrigerated it because it was not in a vacuum sealed container. Thanks, Nancy

    Are the Fleischmanns 4 oz jars of dry yeast enough for you? I would think most supermarkets carry them, but I last bought mine at Target. If you're only home baking bread occasionally (which is what I gather from your OP), I can't imagine needing to buy more at a time.

    I bought that exact same brand (1 pound bag) of yeast last week and really don't bake all that much.

    When that pound of yeast only cost me $2.39, (at the Restaurant Depot in Alsip http://www.restaurantdepot.com ) I don't mind....

    Plus, it lasts forever. I put part of it in an airtight container in the fridge and the rest in an airtight container in the freezer.

    I bought a strip of yeast yesterday and forgot it in the car overnight. Do you think the temperature affected it aversely?

    No. You can freeze yeast for long term storage, so it won't be harmed by a night in the car. It may be slightly slower to do its work, though, if you don't bring it to room temp first.

    Hi- I ended up buying a package of the Saf-Instant yeast at the South Evanston branch of WF for $3.99, which is way cheaper than those individual packets. Thanks, Nancy

    My last yeast purchase was a 2 lb. bag at Costco - I think it was about $4. I've also seen it at Sahar Market and the Middle East Bakery in 1 lb. bags in the $3 - 4 range. I have an old Fleischmann's jar dating back to 2000 - I keep most of the bag in the freezer, and just decant a bit as needed into the glass jar in the fridge. The stuff keeps for years in the freezer.

    I spend *lots* of money for wine yeasts at Scott Labs. Then I keep them in the freezer, where they keep safely for years and years. I recommend it for baking yeast, too.

    Hi,

    At Shop and Save last week, they had Babushka brand fresh yeast for 99 cents a pound.

    I found an article converting fresh yeast:active yeast: instant yeast.

    A conversion table from Red Star Yeast.
