    For cooking at home, we got some soft shell crabs today at ***STORE NAME DELETED*** in Niles. Huge and excellent.

    No photos this time, sorry. Next time.

    EDIT: Since the business I previously posted about here is now displaying a sign full of hate, lies, and total disregard for the law and for the health and safety of their customers, I can no longer recommend them.

    Thanks for the mention of Captain Alex! I bought scallops for lunch and soft shell for dinner. The scallops were noticeably better than what I purchased at Fresh Farms Touhy/Niles a few days ago, simply delicious. Soft shell top of the game as well.

    Two guys in the shop, one I'm guessing the owner, both paying attention to new reality health standards. Price was right, especially in light of quality, and I will be back soon. Thanks again.

    We bought these enormous, delicious soft shell crabs at Heinen's in Glenview this afternoon and pan-sauteed them for dinner this evening. They order them on Mondays and they arrive on Thursdays. Soft drink can shown for size comparison.

    Go 4 Food has them salt and pepper or Hong Kong style. They were coming in the door, alive and packed in straw (as they should be).

    Soft shells are back at Carnivore Oak Park. They will make a sandwich, if asked.

    Aboyer had soft shells recently, a special though
    I did absolutely nothing and it was everything I thought it could be.

    For those who cook them at home, Heinen's in Glenview is now getting them in fresh every Thursday morning. You can call ahead to ask them to set some aside for you. The ones we got yesterday morning were huge, gorgeous, and delicious!

    We recently got one dozen live soft shell crabs from Fortune Fish & Gourmet (which is the supplier for the salmon that's smoked at Homestead Meats).

    These are whales, packed in straw, about 5 oz.+ each. I dispatched them, cutting off the face, scraping out the gills, and removing the apron.

    Two were for dinner, the others were par-cooked and vacuum sealed before freezing.

    Not true in this case. Crab must be cooked either alive or very shortly after death. Once dead, their livers begin emitting an enzyme that will ruin the meat. If you're going to freeze crab, it must be cooked first. This is why you don't find frozen, uncooked crab in stores (you can find it frozen, but it's always been cooked first).

    Soft shell crabs are avail frozen- just ask most sushi bars. The crab was already cleaned and I stand by my comment.

    Not to beat a horse to death (although that's what the Bears are doing to Arlington Park), the soft shells I got were alive, and after dispatching them, I wasn't sure that freezing would kill them fast enough, so I par-cooked them in a little boiling water, then shocked in ice water before freezing. We've had some since, and I don't think the par-cooking hurt them in any way. (Or can crabs feel pain, having their face cut off and gills pulled out before being boiled to death?)

    It’s the same with Maine Lobster, I have never had one complain!
    A cut across the crab just behind the eyes, effectively severs the brain from the crab. Removing the flap and the gills has no effect and freezing or par boiling is not required.
    But I’m not a crab, so?????
    I do agree about the liver enzyme which is why Maine Lobsters usually are not sold dead or frozen.
