I've got to agree with you up to a point on this. It has been my experience since we instituted the XL and XXL sizes that, if you want a crisper crust, the largest size to go for is the XL. This is mostly true of the XXL pizzas that are loaded with ingredients, particularly veggies as they will render quite a bit of water.
