    I'm sure this has been answered at some point but I'm having internet throuble and searching with my phone is a pain in the a**. I just got my first HOTW and sulphur shelf mushrooms. Can I freeze them? And how? I didn't take too many, but it's more than I can use tonight and I'm going out of town tomorrow...

    Happy to assist in making sure they don't go to waste (no clue how well shrooms freeze--never tried it)

    You can freeze them, but they'll turn to complete mush. The flavor is still OK for stocks or something where being mush doesn't matter. The best way to preserve them is to dry them, just putting them on a cookie sheet in the oven at 170 overnight should do it. They should also keep for a few days, so you could just deal with them when you get back if you aren't going away for a week or something..

    I've successfully frozen sufur shelf mushrooms after giving them a quick sauté in butter.

    Thanks for the tips. I gave them all a quick sautéed and divided them into freezer bags to use for soup.
    When I get back I figure there should still be some fresh ones out there so I may try drying those, or frying them up for dinner;)

    I bought a 1.2 lb chunk of a hen of the woods at Green City. Mushroom people had it at 10 bucks per pound (a steal) and the wild mushroom guy had hen at 8 bucks per pound.

    Made a mushroom, shallot and goat cheese tart for an app and then just sauted hen and roasted romanesco for dinner.

    This is a great price for the bumper crop this year. The mushroom is fantastic, mild and nutty.

    I saw Hen of the Woods in Utica over the weekend $10 for 3#
    I think I'll stick to picking my own for free
