I got one of the last paczki this morning at Delightful Pastries at the Metra market. Must have been about $3.50 pre-tax! DAMN! Was this a paczki day premium or are they always that expensive? It was pretty good, but not worth $3.50.

Perhaps the "Old Town Premium" is eclipsed by the French Market Premium. Just looked at my receipt - I was at a 2:1 ratio of $3 paczki to $2 paczki; it appears that the specialty paczki were the more expensive and my tastes apparently skewed specialty.

Strange. I was there around lunchtime, ordered one apricot and one rose, and paid around $4.25.

I love their chocolate French and blueberry cake doughnuts. Their French cruller is so light and airy - just the way I like them. We ate our doughnuts and coffee at the counter one Sunday morning and was very impressed by the constant flow of customers. It is well deserved.

I must have gotten a specialty one for $3. It had a couple of slices of fresh strawberry in there. Definitely not worth the $1 premium.

Less than a jelly doughnut, yes. Yours seems unusually light on the filling though. I had one of those custard ones from Oak Mill on Saturday and it had more filling than that. They had fresh from the fryer rose jam filled ones on Saturday that were delicious. The freshness didn't seem to hold through the day. One I had later was not nearly as good.

The Oak Mill Bakery which I went to was in Arlington Heights. Here is the second paczki which I cut into:

My receipt was a little confusing yesterday too.

For my dozen paczki, my receipt read:

    6 Paczki (Strawberry) 18.00
    12 Paczki (Any) 24.00
    3 Danish 6.00

They're totally worth it, for the record, but it would have been nice to see the prices posted somewhere.

I definitely need to get back to Delightful. The paczek I had there a couple of years ago was in all honesty quite terrible.

The best Oak Mill in my experience is the one in Niles. It's by no means revelatory, just generally solid.

I very much enjoyed Bennison's strawberries and whipped cream version.

I ordered 5 dozen of the smaller paczki from Oak Mill. I happened to pick them up on North Ave but they make everything elsewhere so I don't think there would be much difference. I was very underwhelmed by the amount of filling. So little I couldn't even tell there was any in some if it weren't for the hole and in others, like the blueberry, there was so little to not even to be able to really discern what filling it was.

    Overall, I was very disappointed.

At the Shop & Save in Bridgeview they have paczki available every day I've ever been there. (Once every 1-2 weeks since they opened there) I think they make them there and cost 89 or 99 cents. Their weekly flyer during that week had them on sale for $8.99 a dozen. These were pre-boxed and had an assortment selected by them.

Heck, paczki are only fried sweet dough that sometimes have a filling. For me to pay $3.50 for one, it would have to have a Krugerrand for a filling. :)

I had also ordered some of the mini paczki from Oak Mill. I was also surprised by the small amount of filling.

Missed this the first time around. That seems maybe a little bit light, but not much so. As Joy relates above, 1.5-2 teaspoons is about what the standard pączek should get. It varies wildly by bakery, though, with some catering more to Polish tastes (light on the filling), others to the American palate (more jelly-donut-ish.) Growing up, the pączki in our household only had the lightest dab of filling tucked away into a corner.

For example, here's a Polish web page on "Fat Thursday," with a picture of what I consider a "properly" filled pączek. On the other hand this is just a ridiculous amount of filling..

I like Delightful Pastries quite a bit... though its been a couple months since Ive been.

However, if you think youre over-paying at $3.50 a paczki (which does sound a bit excessive).. there is a solution on offer today. Viz,

I'm bringing some to the office this Fat Tuesday and including another department. All together, we have 26 people (not including me). Every year I ask people in my department if they want me to bring them one, and only two people respond. Do you think 18 is stingy? I want to have enough but I don't want many leftovers, if any.

Edit: I just read in past posts that someone freezes these. I assumed they didn't freeze well. Thoughts?

I'd rather get them from the source - freshness is paramount in paczki!

I ended up ordering some from Bridgeport Bakery. No rose, but a nice selection of other flavors. I'm hopeful that they won't suck. I also considered Ace, but after trying a piece of cake from there that belongs in the Ass-Flavored Pastry Hall of Fame, I think I'll skip it.

According to the helpful woman at the counter, the best way to be assured of obtaining the paczki you want on February 28th is to make an order by phone. Here is where it gets intense. You must reserve your order leaving not only your last name, but your first name and phone number. When you arrive to pick up your order, you will be asked for your last name, then your other identifying information will be cross-checked with the paperwork on hand. (Cases of paczki-loving imposters making off with prepaid orders have been a problem in the past). For those who simply must have the first available paczki of the day, the staff will fill pre-arranged orders for those who knock on the door any time after 12:01 AM on the 28th. (Deliveries of very large orders can be arranged to take place for a couple of days before Fat Tuesday.) Also, if you order bacon buns, you can pick those up, too.

We were advised that it is best to order ASAP if you plan to buy more than a few paczki. As always, it's best to double check about special arrangements. I'd be sure to ask again about the 12:01 pickup option when I called to order if I were planning to be there just after midnight.

Here is a list of paczki flavors available at Bridgeport Bakery:
(75 cents each except as noted below):
    Apple
    Apricot
    Blueberry
    Chocolate Buttercream
    White buttercream
    Cheese (recommended by counter staff)
    Cherry
    Custard (chocolate)
    Custard (powdered sugar)
    Lemon
    Peach
    Pineapple
    Plain
    poppyseed
    Prune
    Raspberry
    Strawberry (powdered sugar)

I made paczki this morning (I never make them on Paczki Day, because I don't think my boss would be thrilled with me requesting a day off just to make pastry). Ended up just making blueberry, rose hip jam-filled because by the time I got done frying them up, I wasn't in the mood to wash MORE pots/pans making pastry cream. Thankfully, my neighbors came through and offered to take most of them, so I could have ONE (plus my mini-fry-tester one).

I made Krapfen dough (German version of Paczki) on Friday night and refrigerated until yesterday morning. I took the dough out and let it come up to temp, rolled it, cut it and let it rise before frying. They didn't puff up. They expanded width-wise, but not up. :( I may have to go back to making beignets instead.
