    Some existing threads on lobster rolls comment on split-top buns buns not being available around here. I remember commenting a summer or two ago that I'd seen them once in Sunset.

    This week Jewel is (according to mygrocerydeals.com) running a sale on Pepperidge Farm, packages of eight, two for $6. I thought I'd pick some up and freeze them for later.

    You'll have to trust me on this, Pepperidge Farm does not produce top-sliced hot dog buns for the Chicago market.

    I signed up for mygrocerydeals.com to check out the ad, and sure enough a top-sliced bun package was featured (in error, however)

    I'll take your word for it, but I swear I saw some kind of split-top buns at Sunset once, during the summer. So I'd be wasting my time looking for something similar at Jewel?

    Well, what I really ought to do is make my own. And if I figure out how to make them in bulk, pass them out to other LTHers, during lobster season.

    why not just eat the bun that is sliced on the side?

    A lobster roll bun always seemed to me like the top half of a loaf of sandwich bread, cut in double thick slices, and split on top. I've never had one that seemed to hard to replicate. But, maybe I'm oversimplifying.

    Now that I live on the East Coast I have have become quite enamoured with the split top buns. The side-sliced buns cannot be buttered up and grilled, which adds a whole new dimension.

    I like lobster very much, i grilled it with butter & serve it with a pinch of salt & black pepper on it. I really liked its taste.

    Hi,

    I saw at Woodman's in Kenosha hot dog buns that were never split. You now have to option to split them anyway you want.

    King's hawaiian now makes Hot Dog rolls - to be more precise, proper Frankfurter rolls as I grew up knowing them
    $2 for a package of 6.

    Flat on the sides so that they can be grilled, and a proper split top.

    Are these buns sweet like the typical Hawaiian bread? If so, I'd probably skip. Don't forget Nicole's Divine Crackers. They make the perfect bun for a traditional lobster roll.

    It looks like they emphasize the word "sweet" on the package, so appears that way. But I dunno, I imagine the sweet bread going quite nicely with big chunks of lobster meat.

    They seem to work well. Unfortunatly, Nichole's is not an option for me.

    Based on my experience in getting to Nicole's yesterday, It's a tough trip but her buns do make a nice roll.-Dick

    I was at the publican quality meats a few months back and noticed they had new England lobster roll buns on sale. They were in packages of 8 I think. Was the first time I saw them in a store, usually I try to bum a few off the fish guy in portage park as they have them all the time.

    I was just thinking about these today. Anybody see these in the Chicago area since this thread originally appeared?

    I have been purchasing Nicole's since the previous Posts about lobster rolls and buns.
    I have twice purchased the split top buns that Woodman's sells and the last time I had Nicole's to make a comparison.
    Unfortunately the split top buns at Woodman's come pre sliced and the slice went almost all the way through, so the buns fell apart even before we could get lobster in them.
    A lobster roll is just not a split top but must be substantial enough to hold the lobster together, that is also why New England lobster rolls are served in a paper sleeve. Hot dogs by virtue of thier construction provide the rigidity for soft buns.
    While Nicole's buns have no paper sleeves, neither are they required, pricey, Nicole's are still the only locally sold option.-Dick

    Forgive me, what's Nicole's? Is it a brand or a local grocery store? And where is this Woodman's? (Edit: Oh, I see Woodman's is in Kenosha.)

    Nicole's, a.k.a. Nicole's Divine Crackers, is a small independent bakery on Kingsbury Ave. just south of North Ave., right across from the giant Lincoln Park Whole Foods.

    Hi,

    At Sunset Foods in Long Grove, I found Pepperidge Farm top split hot dog buns.

    I would call in advance, because these may be a regular item or the remains for a special order for someone.

    Frankly, I still want the paper sleeve to help keep the bun and filling together.
    I've got the pan and have made my own, too dense.

    In Mundelein, there is a hot dog stand featuring hot dogs from Buffalo, NY. They serve their hot dogs on these paper sleeves. He may just sell you a few for your purposes.

    He also offers Buffalo style wings.

    What you pictured is called a closed hot dog tray and not the traditional sleeve that has one end opened ala Howard Johnson's and other Lobster Shacks.
    I have located a supplier but will have to purchase a case.

    On the other hand, New York's North Country's iconic Michigan can come in either bun, but always has a very correct paper tray. :D

    I think I mentioned this before, but King's Hawaiian puts out perfect split top frankfurter/lobster rolls. Not the toasted white bread rolls I was brought up with, but very tasty and available locally.

    $2 for 6 of their house brand. It seems like these are very hard to come by in Chicagoland so I thought I would spread the word. I haven't tried them, but they looked pretty good with ample room to griddle them in butter. What are you waiting for? Go get some now!

    This will not help most of the readers of this Forum but if you are serious about your lobster rolls and travel, the Sendick's in Mequon Wisconsin makes an awesome whole wheat hot dog bun that is great for a lobster roll.
    I stumbled on these when needing lobster rolls and the Sendick's only had these whole wheat buns that are made in the store.
    They are not sliced and have enough body that one doesn't require the traditional cardboard sleeve to hold the lobster.
    A stiff hot dog holds any soft floppy hot dog bun together but with chopped lobster, that support is not present.
    I can then slice partially from the top, toast in butter and then fill with lobster.
    I use fresh shucked Maine lobster, diced celery and Kewpie (yes, I know it;s got MSG!) (Japanese mayo).
    The taste of Kewpie simply can't be beat!
    H-Mart had lobster for $6.98/# Sunday which is good and bad.
    softer shell, easier to shuck but less meat.
    Boil for 12 minutes, chill in cold water, shuck, reserving the knuckle meat, inner liquid, interior body after gill removal and tomalley for a lobster stew I will make tonight.
    I reserve a whole claw for each roll which is put on top of the filled bun for presentation.
    I call ahead and order the whole wheat hot dog buns. they do not come sliced.-Richard
